Elegant Turkey, Cranberry & Brie Quesadilla

What you need:

+ 1/2 c. sour cream, low fat
+ 1 oz (1/2 c.) chives, thinly sliced
+ 1 tsp. fresh garlic, minced
+ 1/2 tsp. lemon juice
+ 1/4 tsp. salt
+ 1/8 tsp. cayenne pepper, ground
+ 1 lb. turkey breast cutlets
+ 2 c. Brie, rind removed
+ 8 flour tortillas, low fat, 8-inch
+ 1 c. cranberries, sweetened dried
+ 1/2 c.walnuts, toasted and chopped
+ 1/2 c. chives, thinly sliced
What to do:
1, Preheat oven to 350°F.
2. Purée topping ingredients in food processor until smooth. Refrigerate.
3. Sauté cutlets in lightly oiled skillet over medium heat 5 minutes per side until turkey is no longer pink in center and reaches internal temperature of 170°F. Cool and shred.
4. To make quesadilla: Spread 1/2 c. Brie over tortilla. Layer 1/2 c. turkey, 1/4 c. cranberries, 2 Tbsp. walnuts and 2 Tbsp. chives. Top with second tortilla.
5. Bake quesadillas on baking sheet 8 to 10 min. until cheese is melted. Cut into wedges. Serve with chive topping.
