Mini Pork Meat Loaves

What you need:

+ 1 lb. ground pork
+ 1 (14 oz.) jar pasta sauce
+ 1 1/2 c. shredded Italian cheese blend
+ 1 1/2 c. soft fresh bread crumbs
+ 1 egg
+ 1 Tbsp. salt-free Italian herb blend seasoning
+ 1/2 tsp. salt
+ 2 Roma tomatoes, thinly sliced
+ 1/4 c. fresh basil leaves (optional)
What to do:
1. In large mixing bowl combine ground pork, 3/4 c. of pasta sauce, 1 c. of cheese, bread crumbs, egg, seasoning and salt. Shape mixture into 4 oval-shaped loaves (about 6 in. in length) and place on a foil lined baking sheet sprayed with nonstick cooking spray.
2. Top each loaf with some of the remaining pasta sauce, remainder of the cheese and fresh tomato slices. Bake in 425°F oven for 15 min. or until cooked through to a final internal temperature of 160°F. Garnish with basil leaves if desired and serve with any remaining sauce.

* These individual meat loaves make a great weeknight meal. Serve with baked potatoes and green beans.
